My Favorite Chocolate Chip Cookies!!


Here is my favorite chocolate chip cookie recipe. It makes a ton so I usually bake half and freeze half. Otherwise I end up eating wayy too many!!!

2 cups butter, room temperature
2 1/2 cups brown sugar
1 cup white sugar
1 tablespoon vanilla
4 eggs
1/4 cup sour cream
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
5 1/2 cups flour
4 cups (2 bags) chocolate chips

Directions

Cream together butter and sugars for 6-8 minutes on high speed. Add eggs and vanilla and beat 4-5 minutes more. Stir in sour cream, then stir in salt, soda and baking powder. Blend in flour, 1 cup at a time. Stir in chocolate chips. Drop by teaspoonfuls onto ungreased cookies sheets and bake for 8-10 minutes at 350.

Octo Doggy Dawgs!!!

This is a way easy and fun recipe I found in a magazine while I was waiting for a Doctor's appointment.


You cut up hot dogs and push spaghetti noodles through....

Chicken Brushetta



This is a recipe I found in a Kraft magazine a few years ago but have a hard time finding the recipe when I want it. So here it is!! It's pretty simple and good if you have some extra Stove Top Stuffing!!!

1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup 2% Milk Shredded Mozzarella Cheese

Preheat oven to 400 degrees

1. MIX tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.

2. LAYER chicken, basil and cheese in 3-qt. casserole or 13x9-inch baking dish.

3. TOP with stuffing. Bake 30 min. or until chicken is done.

Cajun Chicken Linguini


Okay so the pic of this dish is really not attractive. But this is one of my favorite dinners!!!

Ingredients:
1 package Linguini
Approx. 4 Chicken Breasts
Approx 2 T. Cajun seasoning. I use Zatarain's Blackened Seasoning. You can use more if you like it spicy!!!
1/4 C. Butter
2 green peppers sliced
1 red pepper sliced
4 1/2 C. Heavy Cream
1 tsp. Basil
1 tsp. Lemon Pepper
Salt, pepper, and garlic powder to season
1 1/2 C. grated parmesan cheese

Cut the chicken up and coat it with the cajun seasoning. Saute the chicken in the butter and add the peppers. Cook until tender and then stir in the cream and remaning ingredients. Toss in linguini.

Sticky Chicky


This is a really easy recipe that is easy to make and has simple ingredients.


Approx 4 chicken breasts, diced

4 Cups Dark Brown Sugar

1 Cup Vinegar (I use white)

approx 2 tbsp soy sauce

Flour


Roll the chicken breasts around in the flour. Stir fry in a bit of oil until the chicken is browned and for the most part, cooked. In the meantime, combine the brown sugar, vinegar and soy sauce in a pot and heat up. Put the chicken and sauce in a pan and cook at 375 for approx. 40 minutes or until chicken is cooked. Serve over rice!!!

Oatmeal Butterscotch Bars


Ingredients:

1 cup shortening
2 cups brown sugar
2 eggs, well beaten
1 t. vanilla
1 t. baking powder
1 t. salt
1 1/2 cups flour
4 cups oatmeal

Filling:

1 package butterscotch chips
1 can sweetened condensed milk
2 T. butter
1 t. vanilla
1/4 t. salt

Combine ingredients until blended. Save some mixture for the top. Press into bottom of large cookie sheet. Mix all filling ingredients in a saucepan on low heat until melted. Top with reserved crumbs. Bake at 350 for 15 minutes.
